Smacked Cucumber Salad (Pai Huang Gua) 🥒 Ingredients - 1 large cucumber - 1 tsp salt - 1 tbsp toasted sesame seeds - ½ tsp sugar - ½ tbsp black vinegar (or balsamic vinegar as an alternative) - 1 clove garlic, finely grated - chilli crisp, to serve Method 1. Place the cucumber on a sturdy surface. Using the flat side of a large knife or a rolling pin, lightly smack the cucumber five or six times to break it open slightly, but avoid smashing it into mush. Cut the cucumber into 10–12 bite-sized pieces at an angle. 2. Put the cucumber pieces in a bowl, sprinkle with salt, and toss to coat evenly. Let the cucumber sit for 10 minutes. After 10 minutes, drain off any liquid that has been released. 3. Add the sugar, sesame seeds, black vinegar, and grated garlic to the cucumber pieces. Mix well to combine. 4. Transfer the cucumber salad to a serving bowl and garnish with chilli crisp to taste. Serve immediately and enjoy! #cooking #food #Recipe #foryou #viral

Happy New Year’s Eve legends! Oliebollen Ingredients - 14g dried yeast - 125ml warm water - 60g caster sugar - 450g flour - Pinch salt - 250ml milk - 2 eggs - 100g currants - 100g raisins - 1 granny smith apple, diced - Icing sugar for dusting - Oil for frying (I use canola) Method 1. Place the yeast into the warm water, stir and set aside. 2. In a large mixing bowl add the sugar, flour, and salt and mix. 3. Create a well in the centre and add the milk, beaten eggs and water yeast mixture. 4. Starting from the centre and working your way out mix the batter. 5. Mix through the currants, raisins and apple. 6. Leave the mixed dough in a bowl big enough for it to double, cover it with plastic wrap and set aside for 1 hour. 7. In a large pot 2/3 full with oil, heat until it reaches 160c. 8. Using 2 spoons, place in golf ball size pieces of the dough in batches of 5-6 and cook until golden brown - around 5-6 minutes. 9. Remove from the oil and leave on a wire rack to drain. 10. Dust HEAVY with icing sugar and enjoy! #cooking #nye #food #Recipe

Pan fried barramundi with romesco and kipfler potatoes Romesco Ingredients: - 2 bullhorn peppers (or capsicum/bell peppers) - 2 plum tomatoes, halved - 4 garlic cloves, lightly crushed - olive oil - salt - 60g (2 oz) almonds - 2 pieces of stale bread - 1 tbsp smoked paprika - 2 tbsp sherry vinegar Method**:** 1. Preheat your oven to 200°C (400°F). Place the peppers, tomatoes, and garlic in an oven dish. Drizzle with olive oil and season with salt. Roast for 25–30 minutes until the vegetables are softened and beginning to colour. 2. Remove the dish from the oven and transfer the roasted peppers to a bowl. Cover the bowl with a plate and let the peppers steam for 10 minutes. 3. Add the roasted tomatoes and peeled garlic to a blender. 4. Toast the almonds and torn pieces of bread in a dry pan over medium heat for 5–6 minutes, stirring frequently. Add them to the blender. 5. Peel the skin from the peppers, remove the seeds and stems, and add the flesh to the blender. Include the smoked paprika, sherry vinegar, a pinch of salt, and 3 tablespoons of olive oil. 6. Blend the mixture for a couple of minutes until smooth-ish. A little texture is desirable. If the sauce seems too thick, add some of the liquid released from the peppers during roasting. 7. Taste and adjust the seasoning as needed. Your Romesco sauce is now ready to serve! Romesco is fantastic with fried fish, grilled meats, or as a dip for pre-dinner snacks like crusty bread or raw vegetables. #cooking #fish #Recipe #viral

Braised Oxtails Ingredients 8 lbs oxtails (approx) 1 tsp ground allspice 5 sprigs thyme 10 cloves garlic, minced 1 bunch scallions, chopped 1 white onion, diced 3 tbsp ketchup 2 tbsp browning sauce 1 tbsp paprika 2 tbsp all-purpose seasoning 1 tsp complete seasoning 1 tsp black pepper 3-4 Scotch bonnet or habanero peppers, finely chopped (seeds removed; wear gloves) Oxtail Braising Ingredients 1 large onion, quartered 3 celery ribs, sliced 3 carrots, sliced 2 tbsp tomato paste 2 cups red wine (Cabernet Sauvignon) 8 cups beef broth (about 2 cartons) 4 bay leaves 1 tbsp olive oil Braising Oxtails Heat 1 tablespoon of olive oil in a large pot over medium-high heat. Sear the oxtails in batches for about 2 minutes per side until browned. Avoid overcrowding the pot. Set the seared oxtails aside in a bowl. Scrape up the browned bits from the bottom of the pot without removing them—this adds flavor. In the same pot, sauté the onion, celery, and carrots over medium-high heat until golden and softened. Stir in 2–3 tablespoons of tomato paste and mix well. Reduce the heat to low. Pour in the red wine and 6 cups of beef broth, reserving the remaining broth for later if needed. Add the oxtails back into the pot, ensuring they are submerged in the braising liquid. Add bay leaves and additional broth if needed to cover the oxtails. Simmer on low for 3½–4 hours, stirring occasionally and checking the liquid level every 45 minutes.
