apartment cafe: italian golden hour 🍊
 sicilian pizza with pistachio creme and prosciutto 🍕 1. Mix 2 tsp active dry yeast, 1 tbsp honey, 2 tbsp olive oil, 2 1/4 cup warm water, 5 cup bread flour, 2 tsp kosher salt on medium-low in a stand mixer for 8 minutes. Transfer to a greased bowl. Let rise in the fridge over night covered. 2. In a food processor, add 120g @wonderfulpistachios pistachios, 2 tbsp olive oil, juice of 1/2 lemon, salt. Process until smooth. Then add 100g mascarpone cheese and whip into a creme. Taste for seasoning. Transfer to a piping bag. 3. Turn pizza dough out into a baking sheet that you greased with 1/4 olive oil. Spread out dough to the whole sheet. Cover with plastic and let rise 45 min to 1 hour. Then drizzle with 2 tbsp olive oil, 1 cup parmesan, 12 oz fresh mozzarella. Bake at 450F for 20 minutes. 4. Top with pistachio creme, @eatalynewyorkcity prosciutto, calabrian chilis, basil, pepper. raspberry gianduja maritozzi 🇮🇹 1. Add 2 3/4 cup ap flour, 1/4 cup milk powder, 3 tbsp sugar, 2 tsp kosher salt, 3 eggs, 2 tsp active dry yeast, 1/4 c water to a stand mixer. Mix on med-low for 8 minutes. Then add 10 tbsp room temp butter. Mix another 5 minutes. Transfer to a greased boil and let rise at room temp covered 30 minutes, then move into fridge over night. 2. Turn out dough, deflate. Divide into 12 pieces. Roll into balls. Add to 2 parchment lined baking sheets and cover. Let rise in a warm spot for 1.5 hours. 3. Bake at 375F for 15-20 minutes. Once cool, split in half almost the whole way through, fill with a little @drinkghia hazelnut spread, 2-3 raspberries, whipped cream. In a stand mixer add 1 package active dry yeast, 1/2 cup sugar, 1/2 cup olive oil, 4 eggs, 8 1/2 cups all purpose flour, 1 tbsp salt. Mix on low until combined, then increase speed to medium-low and knead for 8-10 minutes. Let proof covered in a greased bowl until doubled in size, 1.5 hours at room temp or overnight in the fridge. 2. Knock air out of dough. Turn out. Divide into 3 even pieces. Stretch/roll dough pieces out into really long braids. Secure 1 bunch of ramps or scallions into the dough strands by pinching the dough around the base of the onions. The braid the strands together. Twist them into an S. Let proof covered for 1 hour. Brush with egg, sprinkle w flaky salt, then bake for 30-35 minutes at 375F. spring coq au vin 🍗 1. Sear 4 chicken legs in a dutch oven over medium high heat until golden on both sides. Then saute mushrooms and shallots until tenders. Add in the chicken legs and barely cover with white wine. Season. Add chopped tarragon too. Bring to bare simmer. Reduce heat to medium low. Then add the lid and braise for about 1 hour. Garnish with parsley. tarragon niçoise salad with seared tuna 🥗 1. Bring a pot of water to a boil. Season with salt. Blanch 16 oz. green beans for 4 minutes, then transfer to an ice bath. Then to a dry towel. Boil 6 eggs for 8 minutes. Then boil 16 oz. Small potatoes until tender. Let everything cool and dry. 2. Mix 1/2 cup olive oil, 1/3 cup apple cider vinegar, 2 tbsp dijon, salt, pepper, chopped tarragon, and a pinch of sugar. 3. Sear 1 filet of tuna encrusted with sesame seeds over high heat for 1 minute on each side. Slice. 4. Arrange salad over greens of your choice. italian dinner for just me 🍝 recipes are below 👨‍🍳 lasagna pinwheels 🍝 1. Melt 4 tbsp butter over medium heat. Whisk in 1/4 cup flour and cook for 3 minutes. Then stir in 2 cups milk, 1 tsp salt, black pepper, lots of parm. Whisk for 2-3 minutes until very thick. Cover and let cool. 2. Blanch 4 fresh lasagna pasta sheets (about 15 seconds). Transfer to clean kitchen towels. 3. On parchment, place 1 pasta sheet. Then spread over 1/4 cup béchamel, 1/2 cup shredded mozzarella. Place another pasta sheet on top. Spread 1/4 cup (chilled) Rao’s Homemade Creamy Marinara Sauce with Mascarpone Cheese, leaving a border at the top short end. Spread béchamel on that border. Then roll up the pinwheel toward the béchamel. Wrap parchment around the roll and transfer to a tray. Repeat again with remaining ingredients. Freeze 45 minutes. 4. Slice each log into quarters. In a baking dish, spread 1 cup Rao’s Homemade Lemon Parmesan Sauce. Then add the pinwheels on top. Bake at 425F for 15 minutes, then broil for 2-3 minutes. polenta fries 🌽 1. Heat 3 cups water to a boil. Season with 1.5 tsp salt. Then whisk in 1 cup quick cooking polenta. Add 1/2 cup parmesan, lots of black pepper. Transfer to a greased 8in. Square pan. Chill 30 minutes covered. 2. Slice into fries. Fry in 350F oil for 8 minutes. Then transfer to a paper towel lined rack, season with flaky salt. Marinate 3 lbs. skirt steak for 2-4 hours in 1/4 cup lime juice, 2 tbsp diamond kosher salt, 8 minced garlic cloves, 1 tbsp cumin, 1 tbsp oregano, 1 tbsp Chile powder, 1/4 cup olive oil, 2 tbsp honey. 2. In a food processor, add 6 ripe avocados, 3 tbsp lime juice, 1 tsp kosher salt, 1/4 cup greek yogurt and process until smooth. Also make pico de Gallo and whatever other sides you want. 3. Grill or sear steaks on high heat for 2-3 minutes per side for medium rare. Let rest then slice. horchata tiramisu 🥛 1. Whisk 5 egg yolks with 1/3 cup sugar until light. Then beat in 16 oz mascarpone, 1 tbsp cinnamon, 2 tsp vanilla, 1/2 tsp almond extract, 2 tsp sesame oil, 1/2 tsp kosher salt. 2. With a hand mixer, whip 5 egg whites with 1/3 cup sugar until it holds peaks. Then fold into egg yolk mixture. 3. In a large casserole, start with a layer of cream, then add lady fingers. Dribble strong coffee (mixed with some rum) over the lady fingers. Then continue layering. Let rest overnight covered. cilantro jalapeno tahdig 🌿 1. Boil 3 cups basmati rice like pasta in a lot of salted water for 5-6 minutes. Then drain into a colander. Mix 1/3 of the rice with 1 tsp bloomed saffron. Mix 2/3 of the rice with 2 bunches finely chopped cilantro and 3 diced jalapeños. 2. In a non-stick pot, add 1/4 cup melted ghee. Then pack on saffron rice. Then pile on green rice. Using a spoon make 5 holes in the green rice going almost to the bottom. Add tight-fitting lid. Cook on high for 5 minutes, then low for 45 minutes.
