One-Pan Steak & Gnocchi 🔥 Ingredients: - 4 pieces onglet/hangar/skirt steak @MagnessFarms - 2 tbsp balsamic vinegar, 1 tbsp soy sauce, 1 tbsp honey, 1 tsp Dijon - 500g gnocchi - 2 handfuls per person mixed veggies (peppers, tomatoes, red onion, broccoli) - oil, salt & pepper 1. Pat your steak dry with a paper towel and then salt and oil 2. Make your sauce in a jar or bowl & dice your veggies 3. Heat a pan on high heat for a few minutes and add your steak, you want a sizzle. To ensure an even crust and even cook, keep flipping your steak every 30 seconds or so and feel your steak firm up - when your steak is ready is down to your cut & the temperature, press it & make your judgement- it’s a process of learning! 4. Rest your steak & add your gnocchi for 3-5 mins to crisp up, remove & add your veg for 3-5 mins then your sauce - add back your gnocchi for a further minute or two 5. Slice your steak AGAINST the grain otherwise it will be tough - plate up & ENJOY #steak #familydinner #onepanmeal #fromscratch

For the Chicken Marinade: 500g chicken breast 100g plain yogurt 1 tbsp fresh lemon juice 2 cloves garlic 1 tbsp minced ginger 1 tsp ground cumin 1 tsp ground coriander 1 tsp paprika 1 tsp garam masala 1/2 tsp chilli powder 1/2 tsp turmeric 1 tsp salt 1 tsp black pepper For the Masala Sauce: 1 tbsp ghee 1 small onion 2 cloves garlic 1 tbsp minced ginger 1 tsp ground cumin 1 tsp ground coriander 1 tsp paprika 1 tsp garam masala ½ tsp turmeric ½ tsp chili powder 400g tomato pasata 100ml double cream 1 tbsp tomato puree 1 bay leaf 1 tsp honey Salt Black pepper Fresh coriander (for garnish) Rice (to serve with) For the Dough: 125g bread flour 1 tsp honey 1 tsp salt 1 tsp baking powder 60g plain yogurt 60ml warm milk 1 tsp oil For the Garlic Butter (Naan): 2 tbsp butter 1 clove garlic, minced Fresh coriander Pinch of salt Tikka Masala Method: 1. Mix yogurt, lemon juice, garlic, ginger, and spices in a bowl. Add chicken chunks, coat well, and marinate for at least 1 hour. 2. Cook the chicken in a hot pan with some oil until the chicken has colour on all sides. 3. Heat oil or ghee in a pan over medium heat. Cook the onions with a bay leaf until the onions are soft and golden brown. 4. Stir in cumin, coriander, paprika, garam masala, turmeric, and chili powder. Cook for 30 secs. Add garlic and ginger, cook for another 1-2 mins. Add tomato puree and cook for 1 min. 5. Add the tomato pasata and honey. Simmer for 10 mins, then blend the sauce until smooth. 6. Return to the pan, stir in cream, season with salt, Garam masala and coriander. Simmer for another 5 mins. Add the cooked chicken to the sauce and simmer for 5 more mins. 7. Garnish with fresh coriander. Serve with naan and rice. Naan Method: 1. In a bowl, mix flour, salt and baking powder. Add yogurt, warm milk, and oil. Mix until it forms a rough dough. 2. Knead for 5-7 mins until smooth. If sticky, add a little flour. Then cover and let rest for 30 mins to 1 hour. 3. Melt butter in a pan, add garlic and cook for 30 secs. Stir in chopped coriander and a pinch of salt. Set aside. 4. Divide dough into 3 equal balls. Roll each ball into an oval shape. 5. Heat a dry pan on high heat until hot. Place a naan in the pan and cook for 45 secs until bubbles form. Flip and cook for another 45 secs. 6. Remove and brush with garlic butter immediately. HELP! I’m down to zero fully-working limbs now 😭 Let this be a lesson for all of us… Start off slowly at the gym and gradually increase the intensity and duration of your workouts instead of trying to do too much too soon, especially if you’re a beginner of disabled, like me; prioritise proper form and learning the equipment before pushing yourself to the limit and potentially injuring yourself. DON’T FORGET TO WARM UP! Thank goodness for my wax therapy bath, it saved me!! All my Ehlers Danlos family; we are at a significantly higher risk of developing tendonitis due to the inherent joint hypermobility which weakens the connective tissue in tendons, making them more prone to inflammation and injury from overuse or repetitive motions; essentially, the loose connective tissue in EDS can lead to unstable joints and increased strain on tendons, causing tendonitis. 👉A big mistake people make is they think that being a good person means giving in to other person’s demands, always being the one to say, “I don’t mind” and flexing this way and that to accommodate them. But what starts as an intention to be kind, can easily slip into a habit of appeasement. Doing that may help to keep the peace in the moment, but leads to deep resentment and bitterness in the long term. But appeasement often feels less like a choice, and more of an escape from confrontation or conflict. And it nearly always requires some form of self-betrayal. 3. A habit of kindness contributes positively to your wellbeing and your relationship. Appeasement sets a precedent for what they will come to expect of you that builds resentment and bitterness and often the destruction of the relationship itself. Many of us have been taught to believe that being a good partner, friend or family member is someone who drifts in any direction others want us to go. That is not true. Being a decent person and being an assertive person are not opposite ends of a spectrum. In fact, one demands the other. The good news is that assertiveness is not something you are born with. Valentines Chocolate Strawberries 🍫 🍓 Ingredients: - 200g chocolate chips/chopped chocolate - 1 tsp coconut oil - 2 handfuls strawberries - 200ml water - 50-100ml vinegar - pinch of salt 1. Soak your strawberries in water & vinegar for 10 mins, then drain, rinse & pat dry 2. Melt your chocolate with coconut oil either over boiling water in a bowl or in the microwave for 30 seconds intervals 3. Pour into a glass & start dunking your strawberries, don’t overdo them. You only need a thin layer & add to baking paper on a tray. Refrigerate/freeze for 30-60 mins until solid 4. Heat a knife in hot water and neaten up the edges of the strawberry 5. Add the rest of the chocolate to a freezer bag & cut off the end (a tiny amount) then drizzle over the strawberries. Finish with some salty flavours and refrigerate for 5 mins 6. Ingredients: 600g stewing beef (I used beef shin) 2 tbsp plain flour 1 tsp salt 1 tsp black pepper 2 tbsp beef dripping 400ml beef stock 300ml Guinness 3 potatoes 1 carrot 1 onion 1 leek 2 sprigs fresh thyme 2 bay leaves 60g pearl barley Fresh parsley for garnish Method: 1. Chop the beef into large chunks, season with salt and black pepper, lightly coat in plain flour. Heat a pan over medium-high heat with some beef dripping and sear the beef on all sides. 2. Remove the beef, add chopped carrot, onions, leeks and pinch of salt and black pepper. 3. Pour in the Guinness to deglaze the pan, scrapping the bottom. Simmer for a few mins. 4. Then add the seared beef, stock, thyme and bay leaves. Cover and cook on low for 2 hours. 5. Toast the barley in a separate pan over a low-medium heat for a few mins. Add the barley and chopped potatoes, then cook for a further 1 hour. Remove the bay leaves and thyme, serve and enjoy! #beefstew #irishfood #nationaldish #Recipe
