Ingredients: 750g bone-in, skin-on chicken thighs 5 cloves garlic 4 tbsp soy sauce 5 tbsp white vinegar 240ml water 1 tbsp whole black peppercorns 2 bay leaves 1 tbsp oil 1 tbsp sugar Method: 1. In a bowl, mix the chicken with soy sauce, garlic, and black pepper. Let it marinate for at least 30 minutes (or overnight for deeper flavour). 2. Heat oil in a pan over medium-high heat. Remove chicken from the marinade (save the marinade) and sear for 2-3 mins per side until browned. 3. Pour in the reserved marinade, vinegar, water and sugar. 4. Let it simmer for a few mins without the lid to cook out the vinegar. 5. Cover, and let simmer on low heat for 30 mins or until the chicken is tender. 6. Mixed Berries, Honey & Miso Jam 🍓🍯 Delicious & delightful Ingredients: - 500g mixed berries - 500g sugar (mix of honey, white & brown sugar) - the juice from 1-2 lemons - 1 tsp of white miso paste 1. Combine the berries and sugar and begin to simmer over medium heat until they become a liquid 2. Squeeze in your lemon juice & then simmer for 10-20 minutes 3. Do the plate test - add your jam, let it cool, push it and if it wrinkles it’s ready - if it’s runny, simmer for longer 4. Remove from the heat and mix in your miso paste 5. Make sure your glass has been thoroughly cleaned with boiling water & then funnel in your jam 6. This can stay sealed in the cupboard for 6 months or open in the fridge for around a month - keep an eye on smell and the look of your jam, it could be fine for longer! #homemadejam #jam #jamrecipe #fromscratch
Hot Cross Buns 🤤 For the Dough: • 500g strong white bread flour • 75g caster sugar • 2 tsp mixed spice • 1 tsp cinnamon • 10g salt • 10g instant yeast • 300ml whole milk, warmed • 50g unsalted butter, melted • 1 egg • 200g mixed dried fruit (raisins, currants, sultanas, and chopped peel) For the Crosses: • 75g plain flour • 75ml water For the Glaze: • 2 tbsp apricot jam (or honey, sugar water) warmed • In a bowl, mix the flour, sugar, spices, and salt. • Pour in the yeast, warm milk, melted butter, and egg. Mix to form a sticky dough. • Knead the dough for 5 minutes until smooth and elastic. • Add the dried fruit and knead for another minute to incorporate. • Place in an oiled bowl, cover, and let rise in a warm place for 1.5–2 hours until doubled in size. • Tip the dough onto a floured surface and gently deflate. • Divide into 12 equal pieces and shape into buns. (Around 100g each) • Arrange on a buttered baking tray, leaving a little space between them. Cover and prove for another 45 minutes. • Mix the flour and water into a smooth paste. • Transfer to a piping bag and pipe a cross on each bun. • Preheat the oven to 200°C (180°C fan). • Bake for 15–18 minutes, until golden brown and risen. (Up to 20-25 mins - keep an eye) • While warm, brush the tops with warmed apricot jam/honey/sugar water to get that shine • Let cool slightly before serving with butter. #hotcrossbuns #fromscratch #baking

Magnesium for sleep? Does magnesium help with sleep? DISCLAIMER: this is NOT medical advice. Just documenting something I experimented with during a bout of poor sleep after already optimising for other sleep habits (as mentioned in the video). Anecdotally I found some benefit but again this is an n=1 experiment and not necessarily applicable to everyone. The research into magnesium & sleep is poor currently but we know it’s a crucial nutrient linked to various physiological processes. Remember to always consult a medical professional before you take any supplement or medication! Fluffy pancakes ingredients: 200g plain flour 2 tbsp sugar 2 tsp baking powder Pinch of salt 250ml milk + 1 tbsp lemon juice 2 eggs 2 tbsp melted butter Extra butter for cooking Method: 1. Mix the milk with lemon juice and leave for 5 mins. 2. Whisk together the flour, sugar, baking powder and salt. 3. In another bowl whisk together the egg, milk and melted butter. 4. Pour the wet ingredients into the dry ingredients, stir and fold until just combined. Leave to rest for 15 mins. 5. Heat a non stick pan, add some butter and pour in some of the mixture. Cook for 1-2 mins on each side until golden brown and fluffy. Serve and enjoy! Crepe ingredients: 125g plain flour 2 eggs 300ml milk 1 tbsp melted butter 1 tbsp sugar Method: 1. In a bowl, whisk the eggs and milk together. 2. Add flour gradually, whisking until smooth and lump-free. 3. Stir in melted butter and sugar. 4. Let the batter rest for 15-30 mins. 5. Heat a non-stick pan over medium heat and add a little butter. 6. Pour a small amount of batter into the pan, tilting the pan to spread it thinly and evenly. 7. Cook for 30-45 secs until the edges lift, then flip and cook for another 30 secs. Serve and enjoy! #pancakeday #fluffypancakes #crepes #EasyRecipes
